After a long day of fasting and working, everyone expects to be rewarded with a nice meal on Iftar. Though, some may neither have the time nor the energy to prepare a full meal every day for the whole month. Besides, Iftaar can appear to be the most difficult task, as it consumes a lot of effort to prepare an extensive meal after fasting for the whole day

Hence, we got you some easy, yet delicious recipes that you can resort to when you’re short in time. 

Greek Grilled Cheese

The grilled cheese sandwich is both light and tasty. It takes no more than 25-minute total preparation time.

Ingredients (Enough for 4 people)

Softened butter, for bread

8 slices sourdough bread

3 cup shredded mozzarella

1 cup crumbled feta

1 jar roasted red peppers, drained and chopped

1/2 cup pitted kalamata olives halved

2 tbsp. freshly torn dill

Directions

  • Butter one side of each bread slice. In a large skillet over medium heat, add one slice of bread, butter-side down. Top with a quarter each of the mozzarella, feta cheese, roasted red peppers, kalamata olives, and dill. Top with another bread slice, butter-side up, and cook until bread is golden and cheese is melty, 2 to 3 minutes. Flip and cook until golden, 2 to 3 minutes more. 
  • Repeat with remaining ingredients to make 4 sandwiches total.

Shish Taouk with Masala Rice

Shish Taouk is an oriental dish that is not high in calories. It’s perfect for those trying to lose weight while enjoying Ramadan eating vibes.

Ingredients (Enough for 4-5 people)

For chicken marination

1/2 KG boneless chicken  

1/4 cup yogurt  

2 tsp sumac powder  

2 tbsp lemon juice  

1 tbsp garlic chopped  

2 tbsp tomato puree

3 tbsp cream  

1/4 cup oil  

1/2 tsp white pepper  

1/2 tsp black pepper  

1 tsp paprika  

1/2 tsp oregano  

1/2 tsp ginger powder  

1 tsp salt or as required

For masala rice

1 red pepper (1/2 red and 1/2 green)

1 onion  

2 cups boiled rice  

Directions

  • Cut capsicum and onion into cubes.
  • Cut chicken into cubes, marinate with all list 1 ingredients for 1 hour. After 1 hour add cubed onion and capsicum mix well.
  • Thread chicken cubes and veggies in skewers. Keep them on a baking tray like shown in the pic so they will equally cook from each side. (don’t throw the remaining marination)
  • Bake them in preheated oven at 180 C, for 30 minutes…turn them after 15 minutes so they will equally cook from both sides.
  • Chop some capsicum and onion, take the remaining marination of chicken, put this in a pan with chopped veggies, let it boil for few minutes, then add boiled rice and salt pepper of your taste, stir it.
  • Serve Shish Tok with masala rice.

Pasta with Quick Meat Sauce

You can make amazing spice for ground beef with simple ingredients such as cinnamon, nutmeg, and red pepper. Added to pasta, you’ll have a delicious meal prepared only in 25 minutes.

Ingredients (Enough for 4 people)

12 oz. fettuccine or any long pasta

2 tbsp. olive oil

1 large onion

kosher salt

Pepper

1 medium carrot

1 stalk celery

2 clove garlic

3/4 lb. lean ground beef

1/4 cup dry white wine

1/4 tsp. crushed red pepper flakes

tsp. ground cinnamon

tsp. freshly grated or ground nutmeg

1 can crushed tomatoes

3/4 cup chopped fresh flat-leaf parsley

Directions

  • Cook the pasta according to package directions.
  • Meanwhile, heat the oil in a large skillet over medium heat. Add the onion, season with 1/2 teaspoon each salt and pepper, and cook, covered, stirring occasionally, 5 minutes. Add the carrot, celery, and garlic and cook, covered, stirring occasionally, until they begin to soften, about 4 minutes more.
  • While the vegetables cook, combine the beef and wine in a medium bowl; break up the beef with a spoon.
  • Add the beef mixture to the vegetables, increase the heat to medium-high, and cook, breaking it up with a spoon, until the liquid has evaporated and the meat begins to brown, about 3 minutes. Stir in the red pepper, cinnamon, and nutmeg.
  • Add the tomatoes to the skillet and simmer until the mixture is slightly thickened about 3 minutes. Stir in the parsley and toss with the pasta.
